Overview of hidden and grey areas: processing effects, artificial colours, flavours and sweeteners, contaminants and provenance
More detailed insights into each, using examples, viz: processing effects on health (e.g. mechanically refined wholegrain cereals), natural flavours that are not naturally-derived, carriers for flavours that do not need to be disclosed, common contaminants that are known carcinogens (e.g. PAHs, heterocyclic amines, acrylamide), and multi-ingredient products in which ingredients are sourced in different countries from the country of manufacture.
